MAPLE-PEAR GLAZED HAM
• 1 fully-cooked spiral ham (7-8 lbs.)
• ½ c pear nectar
• ½ c orange juice
• ½ c maple sugar
• ½ c maple syrup Line roasting pan with heavy duty foil.
Place ham on a rack in the pan. Combine pear nectar and orange juice & brush ½ c over ham. Bake uncovered at 325 degrees for 30 minutes. Brush twice with remaining juice during this time. Combine maple sugar & maple syrup and spread over ham. Bake 45-55 minutes longer or until ham is heated through. Baste occasionally with pan drippings.
MILE-HIGH MAPLE BISCUITS
• 3 cups sifted flour (bread flour is best)
• 2 Tablespoons maple sugar
• 4 ½ tsp baking powder
• ¾ tsp cream of tartar
• ¾ tsp salt
• ¾ cup shortening
• 1 egg, beaten
• 1 cup milk
• maple cream
Sift together flour, maple sugar, baking powder, cream of tartar & salt into bowl. Cut in shortening with pastry blender until mixture resembles coarse meal. Combine egg & milk, beat with fork. Add to flour mixture all at once. Stir with fork to make soft dough that sticks together. Turn onto lightly floured board & knead gently 15 times. Roll to 1 “ thickness. Cut with floured cutter. Place on ungreased baking sheet. Bake at 450 Degrees 12 – 15 min or until golden brown. Cool slightly and glaze with Maple Cream.
MAPLE FRUIT DIP
• 1 – 8 oz pkg cream cheese, softened
• 1 cup maple syrup
• 1 tsp vanilla
• Fruit as desired
Combine cream cheese, maple syrup & vanilla in a bowl. Mix until smooth. Chill in refrigerator. Spoon into serving bowl. Serve with apple slices, pineapple slices, banana chunks, peaches, pears, strawberries or other desired fruit.
BISCUITS AND SYRUP
• 2 c flourZ
• 3 tsp baking powder
• 1 tsp salt
• ¼ c shortening
• ¾ c milk
• 2 c maple syrup
• ½ c water
Sift flour, baking powder & salt together. Cut in shortening. Stir in milk. Form a ball. Roll or pat dough to ½ inch thickness & cut into biscuits. Mix maple syrup and water. Pour in 9 x 9 inch pan. Heat to near boiling, place biscuits on top & bake at 400 degrees until done. Watch carefully to avoid boiling over. Serve hot or cold.
